A QUICK CAKE

Being that I am currently based in Spain, I deemed it appropriate to include a quick and easy dessert hailing from Northwestern Galicia, the Tarta de Santiago.

It is gluten free for those with that need or inclination and it is done in about 30 minutes. Borrowed from a go to cookbook of mine, The Family Meal.

*You can use other citrus as well, I’ve had success with orange, lime or grapefruit rinds too.

**I use a round 23cm diameter x 4cm deep cake pan instead

***I usually don’t do the flour on top of the butter when prepping the pan

****Mine typically takes a few more minutes to bake (like 3-5 max)

******A add just a bit of salt as well - a little pinch
